The Shoun s a Junmai Ginjō made of 100% Hakutsuru Nishiki rice, carefully cultivated in the rich soil of Hyōgo, using 270 years of traditional techniques and the latest technology. 

Hakutsuru Nishiki is a breed of sake rice that the brewery has developed over more than ten years. 
It has a fruity aroma, reminiscent of apples and melons, with a mellow sweetness, refreshing acidity and a full-bodied taste. 
The aftertaste has a fruitiness and a gentle aroma, like bitter chocolate.
